PRESERVED CENTURY EGG
Descriptions:
It is preserved by soaking the duck eggs in a saline solution which consist of clay and salt, but can also include ash, quicklime and rice hulls over a period of a few weeks to even months.
It causes the yolk of the eggs to take on a creamy, cheese-like texture, and transforms the whites into a dark-colored jelly.
Can be eaten alone or with pickled ginger or accompanying congee.
