Silverfish

Also known as whitebait, they are long and small in shape with transparent bodies which turns milky white after being dried. It is a versatile ingredient which is needed to be pre-soak to remove the excess salt before cooking. It can be deep-fried, stir-fried into vegetable dishes, or cooked in porridge.
